The culinary proposal is led by chef Ángel Taboada, whose cuisine is expressed through a tasting menu that explores coastal flavors, local producers, and references to tradition reimagined through a distinctive personal language. Developed by Origen and operated by Aurora, Ettu was conceived with the intention of reinterpreting Cádiz cuisine through technique, memory, and Mediterranean sensibility. The dining room, warm and intimate, opens onto an interior courtyard surrounded by ostionera stone and greenery, creating a serene atmosphere that enhances the experience.
